We caught up with Poke Burrito owner Jimmy Chen, and he says his new restaurant on Lake Street is set to open on June 18.

Chen said the opening date was pushed back a bit because of a small tweak to the menu – Thai ice cream.

“It’s become very popular in Chicago, so that’s why I want to bring this to our existing concept, while it’s the summer season,” Chen said.

He said the restaurant, located at 1025 Lake St., will offer ice cream flavors including mixed berry, Oreo brownie, chocolate, coffee, green tea, vanilla, strawberry banana and more.

Chen said the ice cream is a popular street food in Thailand.

“The taste is completely different,” Chen said. “You will taste the freshness of the ice cream itself.

“No one has that right now in this area.”

For those who can’t wait for Poke Burrito’s grand opening, you can check them out this weekend at Ribfest Chicago at the intersection of Lincoln, Damen and Irving Park.

Chen said Poke Burrito will be there with the new Thai ice cream.
