Sugar Fixé Pâtisserie, the French bakery at 119 N. Marion St. in Oak Park, has undergone a transformation behind the scenes under new ownership. After an initial plan to bring in an outside pastry chef didn’t pan out, Juan Muñoz, who previously worked on the wholesale side of Kribi Coffee, and is currently an Oak Park Township Trustee, stepped in as managing owner.
Muñoz says the shop is working to define its role in the community as the local bakery scene evolves, with a focus on quality. That commitment extends to the bakery’s cake program, long considered one of its strengths.
Corrie Pechan, who has served as cake director since 2018, said the shop is in a good place now that it has people who care about the business. For Pechan, the priority remains flavor over flash. She noted that during wedding tastings, clients often say taste matters even more than design. That’s the reason the bakery does what it does.
Muñoz says cakes will remain a cornerstone of the shop going forward. He explained that cakes have long been a strength and a source of pride for the bakery, crediting Pechan’s work, and said the goal is to keep her cakes always stocked in the display cases — ready for a birthday, a housewarming gift, or any occasion worth celebrating.
Alongside custom and everyday cakes, the cases are filled daily with entremets, macrons, tarts, and iced sugar cookies, all made from scratch in-house.
