For a few years now, my neighbor Roger Lupei and I have been brewing beer at his house.

Being kind of a gear head (I’m one, too), Lupei is way into the technology of brewing, using an inverted fermenter and other fancier hardware to get the best product possible.

Lupei is also a person who seeks to master whatever it is he undertakes.

Lately, Lupei has been unhappy with his sudsy products. I ran into him recently and he told me, “I’m going to give it one more year. If I can’t produce the beer I want in that time, I’m selling everything.”

Lupei is concerned that the water in Oak Park may not be of the quality or mineral composition required to get the best results.

I told Lupei I’d post about his concerns here, and that I would encourage local brewers to contact me if they have any thoughts about producing beer in our village. Do you use tap water? Do you filter it? Do you supplement it with anything?
