Wishbone, the southern cooking updated restaurant owned by Oak Parker Joe Nickson, is making a second run at a Berwyn location. This time the visit may be short-lived by intention as the new eatery is described as a “pop-up” intended to open in December and close in March.

Wishbone operated on Roosevelt Road in a space adjacent to FitzGerald’s for several years. That location is now Capri Restaurant. But in a press release, Nickson said he liked being in business in Berwyn and was open to a return. This time it will be in an existing restaurant space next to Olive or Twist Martini Bar at 6908 Windsor Ave., in Berwyn’s Depot District.

While the new eatery is planned as a pop-up, Nickson allows “that we’ll just have to see what happens” when March comes.
