Urban Pioneer Group located at 7503 Madison St, Forest Park is bringing a hyper-local corned beef collaboration to life at their October 5th pop-up market (11am-3pm).
Continuing their efforts to support emerging artisans, UPG will offer a made-to-order New York deli-inspired sandwich featuring Knockout Catering Co’s corned beef on Lyman Ave. Bread with deli mustard and Knockout pickle slices.
“The bread is a typical deli-rye;” says Tim Giuffi, of micro bakery Lyman Ave. Bread, “it’s made from freshly milled grains, baked in cast iron and sliced for sandwiches.”
Joe Hart of Knockout Catering is pleased to offer the corned beef and pickle garnish to complement Guiffi’s bread. Hart worked closely with his Warrior Chefs to perfect their corned beef preparation. The Warrior Chefs start by hand-trimming brisket before brining it for 14 days. The cured meat is then cooked sous-vide until tender. Sous-vide cooking requires the brisket to be placed in a plastic pouch and cooked low and low in water at a highly regulated temperature. The resulting corned beef is highly flavored and extremely tender.
The sandwiches will be available in limited quantities and sold on a first come first serve basis while supplies last. Whole sandwiches ($10) will feature a full quarter pound of corned beef and half orders will be available for $6.
“If there’s a line we’ll just keep on slicing,” laughs Guiffi.
In addition to offering sandwiches for sale, Lyman Ave Bread will have additional loaves for purchase. Knockout Pickles and UPG’s Luigi Bites will also be available. Artisans selling desserts, flowers and jewelry will also be at the October 5th UPG pop-up market.
