Oak Park bagel maven, Amanda Daly, has confirmed work permits have been approved by The Village of Oak Park to begin construction at the future brick-and-mortar store front for her burgeoning East Coast style bagel business. The forthcoming Daly Bagel located at 130 Chicago Ave in Oak Park is a highly anticipated addition to the Oak Park restaurant scene.

The Daly Bagel crew has been doing as much as possible to prep the space for construction including exterior painting, water main replacement and extensive interior demolition. In addition, Daly has been sourcing kitchen equipment through auctions and has begun the process of selecting and purchasing furniture for her quaint establishment. Via email Daly informed me she expects interior walls to begin going up this week.

Fans of The Daly Bagel should expect a Kickstarter launch this week to help the business get their doors open as soon as possible. If everything progresses smoothly The Daly Bagel should be open for business in fall of 2019.

In the meantime, you can get your hands on some of these slow-fermented, boiled and baked, New York style bagels at Urban Pioneer Group pop up events, Wise Cup and Sugar Beet Co-op. Additionally, their pretzels are served in the Kinslahger tasting room in Park and Daly Bagels are available at the weekly Riverside Farmers Market (Wednesdays 2:30-7pm).
