1. Cheaters Crock Pot Carnitas

Simply slap pork in your slow cooker in the morning and let it simmer low-and-slow all day.  The divine perfume of oranges, limes, cinnamon and onion will greet you when you return home and the tender pork will fall off the bone and shred with ease.  A quick sizzle in a hot pan creates the crispy edges pork carnitas are prized for without keeping you stuck at the stove for hours.

This quick cooking dinner is a riff on a classic Cuban ground meat dish by the same name. Picadillo is traditionally served over rice, but I find wrapping anything in a tortilla keeps kids interested in meal time so I took the dish and turned into a taco of sorts. The addition of salty olives and sweet raisins are traditional; they bring a welcome balance to the plate without making it too adventurous for a peaceful family dining experience.

5. Mashed Potato Tacos

These pillowy morsels are a tiny bit tater tot, a little bit nacho and a whole bunch of fun. Crunchy, greasy and cheesy these tortilla wrapped bundles are a prefect treat on National Taco Day!
