Oak Park’s popular food truck, The 206, which specializes in waffles and coffee is set to open its first brick-and-mortar storefront within the next two weeks.

Owner Valentino Ganacias told Oak Park’s village board Monday night that the build out of the new restaurant at 818 S. Oak Park Ave. is complete and the store will be ready to start serving customers within the next 14 days.

Ganacias said he brought the idea to Oak Park from his long-time home of Seattle, where he co-owned a coffee shop called Empire Espresso.

 “I’m trying to model this on my shop in Seattle,” he said. “We had a connection to the community.”

“I’m comfortable that I’ve done it before, and I can do it again,” he said.

Ganacias has said he plans to continue operating The 206 food truck as long as it is profitable.

He says the store will open at 6 a.m. to catch morning commuters heading to the Blue Line.
