How:

The recipe was created by a French trained chef who chose to name it after a region in the country. Even though that chef is no longer with the Ale House, the Alsace Flatbread holds a permanent spot on the menu and is now one of the most popular flatbreads they offer.

Why:

The homemade dough is rolled thin so it gets crispy, but still is strong enough to hold all the toppings. The flatbread has just the right blend of provolone and mozzarella cheeses. In order to ensure that each flavor comes through in every bite, the bacon is chopped up in small pieces and then sprinkled over the flatbread.  The caramelized red onions are the most unique element of the combination. They're cooked with brown sugar, butter and red wine vinegar to make for a sweet tanginess that compliments the bacon. Gooey cheese and smoky bacon atop a crunchy crust makes for a satisfyingly delicious meal.
