As I was waiting to speak with Redzepi, I read in his Journal that "All ingredients have the same worth." Of course, ingredients have different values, but that's determined by the market, and one cannot say that truffle is a more worthy ingredient than a tomato. As he explained to me, "It's the cook's job to make such foods equally delicious. Obviously, when you have a steak, and you put that on the grill, it's immediate pleasure. With other ingredients, you have to work; you have to be more imaginative."
Our culture has become so insensitive to the way of the hat that we've ceased to make a place for it. And when I say "hat," I mean a man's hat, I don't mean a baseball cap (good for playing baseball) or a stocking cap (guaranteed to make you look like the village idiot).
Last week, Von Tesse "taught" an online video seminar focused on the making her signature drink. Cointreau sent me all the ingredients so I'd be able to make the drink at home while watching Von Tesse do the same on my computer screen. Watching the lovely Ms. Von Tesse making drinks is not hard work.
