 This is a delicious plate of food, "real comfort food," explains Trattoria 225 owner Bill Quick, adding that the recipe was developed by him and chef Jose Luna. "It's our top seller," says Quick, "even during the hotter months of summer."

The rib meat is pleasingly soft, the result of a six-hour braise: I was given a steak knife to eat it, but I didn't need it. I didn't need to add salt, either, as I found this meat to be excellently seasoned. Rib meat is rich with unctuous fat, though the dish is not "fatty" and the tomato sauce and a glass of red wine help balance that richness with some acidity.

With the meat is a mound of risotto with zucchini threads and mushrooms, and there's an excellent range of textures.
